This savory version of biscotti with olives and olive paste can be served on any occasion.
Preparation time: 15 min. | Baking time: 50 min. | Yield: 12-14 biscotti
INGREDIENTS:
- 2 cups flour
- 1/4 cup Parmesan cheese
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon Greek spice
- 2 whole eggs
- 1/3 cup olive oil
- 1/2 tablespoon olive paste
- 4 black olives
- 4 green olives
- 1 tablespoon chopped almonds
DIRECTIONS:
- Combine flour, Parmesan cheese, baking powder, spices, and salt in a large mixing bowl. Then add the eggs and pour in the olive oil. Mix well and knead with your hands until a non-sticky dough forms.
- Finely chop the green and black olives.
- Roll out the dough and add the chopped olives, almonds and olive paste to the center and knead again until everything is evenly distributed.
- Form the dough into a ball. Place it on a baking sheet lined with parchment paper and shape it into a rectangular loaf.
- Bake in a preheated oven at 180 degrees Celsius for about 25 minutes. Then remove from the oven, let cool slightly, and cut into 1 cm thick slices. Return them to the baking tray.
- Bake the biscotti slices for another 25 minutes until golden brown. Let cool and serve.
