Savory olive biscotti

Herzhafte Oliven-Biscotti - O.E.L. - leckerstes Olivenöl und Oliven!

This savory version of biscotti with olives and olive paste can be served on any occasion.

Preparation time: 15 min. | Baking time: 50 min. | Yield: 12-14 biscotti


INGREDIENTS:

  • 2 cups flour
  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon Greek spice
  • 2 whole eggs
  • 1/3 cup olive oil
  • 1/2 tablespoon olive paste
  • 4 black olives
  • 4 green olives
  • 1 tablespoon chopped almonds


DIRECTIONS:

  1. Combine flour, Parmesan cheese, baking powder, spices, and salt in a large mixing bowl. Then add the eggs and pour in the olive oil. Mix well and knead with your hands until a non-sticky dough forms.
  2. Finely chop the green and black olives.
  3. Roll out the dough and add the chopped olives, almonds and olive paste to the center and knead again until everything is evenly distributed.

  4. Form the dough into a ball. Place it on a baking sheet lined with parchment paper and shape it into a rectangular loaf.
  5. Bake in a preheated oven at 180 degrees Celsius for about 25 minutes. Then remove from the oven, let cool slightly, and cut into 1 cm thick slices. Return them to the baking tray.


  6. Bake the biscotti slices for another 25 minutes until golden brown. Let cool and serve.
