What is black garlic?
To produce black garlic, fresh garlic is stored for several weeks or months at a specific temperature and humidity. During this time, the garlic undergoes a chemical process (the Maillard reaction) that significantly alters its consistency, color, and flavor. The garlic becomes black, creamy, and has a sweet, aromatic flavor. It also loses its intense, typical (unpleasant) odor.
By the way: Black garlic isn't produced through fermentation. No lactic acid bacteria are involved in the process.
