Baking with olive oil: Lemon cake with whole lemon

Why not try this recipe? A moist lemon cake with our delicious olive oil, a little sugar, almonds, and a whole lemon—with all the trimmings: juice and zest.
It couldn't be more lemony.
This cake is perfect for any summer party, as a breakfast treat, or as a dessert with a scoop of ice cream or a dollop of whipped cream.
Enjoy the Mediterranean freshness with oil and lemon, but this time sweet!
Ingredients
- 200 g wheat flour
- at least 100 g sugar (if you like it sweet, you should use more, up to 200 g)
- 150 g Sous Chef - Extra Virgin Olive Oil
- 100 g finely ground almonds
- 3 eggs
- 1 whole organic lemon
- 1 packet of baking powder
- 1 pinch of baking soda
- 1 pinch of salt
- Optional: powdered sugar for sprinkling and some lemon zest
Instructions

Wash the lemon and cut it into small pieces, removing the seeds and ends. Then puree the entire lemon segments, including the zest.

Beat the eggs with the sugar for about 5 minutes until frothy and light in color.

Now mix the flour, ground almonds, baking powder and baking soda well together and gradually stir this mixture and the olive oil into the egg and sugar mixture.

Finally, stir in a pinch of salt and the lemon puree.

Pour the batter into a greased loaf pan and bake the cake in a preheated oven at 170 degrees Celsius for about 35 to 40 minutes. The toothpick test will tell you if it's done. Be careful not to overbake the cake to ensure it stays nice and moist.

If the cake gets too dark too quickly, you can cover it with baking paper during the baking time.

Let the cake cool slightly, remove it from the pan and sprinkle it with powdered sugar and a little lemon zest if desired.

Serve the cake with a scoop of ice cream or some whipped cream and a peppermint leaf.
