What are grilled green olives?
The production
The large green Halkidiki olives are grilled, then marinated with herbs, bukovo and garlic and finally vacuum sealed.
The olive variety
The green Chalkidiki olives come from the Chalkidiki peninsula in Greek Macedonia. They are almost exclusively cultivated there.
This variety has large, green fruits.
Many types of olives change color to purple, brown or black as they ripen. The Chalkidiki olive, on the other hand, remains green.
What is Bukovo?
Bukovo is a spicy pepper variety from the Macedonia region. It was used in traditional cuisine there, was almost forgotten and is currently being rediscovered throughout Greece.
