Fresh from the new harvest, we would like to offer an unfiltered OEL again this year - extra virgin olive oil from organically grown Koroneiki olives.
This OEL does not require the final filtration process, so it contains more suspended solids and has a cloudy appearance.
Especially when the olive oil is fresh, the suspended matter carries flavor and makes this cold-extracted extra virgin olive oil even grassier and fresher.
Over time, suspended matter settles at the bottom of the canister, which is why it is recommended to swirl it slightly before use.
Cold extracted olive oils of the highest quality, unlike refined cooking oils, change their taste over time. At first, immediately after harvesting, they are still quite bitter and raw. Over time, extra virgin olive oils become milder. The Koroneiki olive, from which our olive oil is obtained, has comparatively few bitter substances, but has many grassy and citrus notes, so that it tastes fantastic even when fresh.
