What exactly is OIL dust?
OIL dust is dried olives that have been crushed into small flakes and can be used like a spice.
Making the olive flakes
For OELstaub, the olives are first debittered as normal for a few weeks using brine and then marinated with vinegar, oil and, if necessary, herbs. They are then dried at below 40°C and chopped.
Use of OIL dust
OIL dust can be used like a spice or herbs. It's best to sprinkle it over the finished dish to add a final touch with the spicy olive aroma.
