All olives are debittered in brine for several weeks. Then, like our mixed olives, they can be marinated with herbs and olive oil and then vacuum packed in jars.
The olive varieties
The green Chalkidiki olives come from the Chalkidiki peninsula in Greek Macedonia. They are almost exclusively cultivated there.
This variety has large, green fruits.
Many types of olives change color to purple, brown or black as they ripen. The Chalkidiki olive, on the other hand, remains green
The dark Kalamata olive originally comes from the region around Kalamata, but is now grown worldwide. Our olives come from Greece. The Kalamata variety is slightly softer than the Chalkidiki variety, large and fruity.
