The large green olives are debittered in brine for several weeks, then marinated with herbs, garlic, vinegar and olive oil and then vacuum packed in jars.
The olive variety
The green Halkidiki olives come from the Halkidiki peninsula
Greek Macedonia. They are almost exclusively cultivated there.
This variety has large, green fruits.
Many olive varieties change their color towards purple as they ripen,
Brown or black. The Chalkidiki olive, on the other hand, remains green.
